Sometimes I just check the fridge looking for “something tasty”. When I don’t find anything I usually end up cooking something really yummy in order to enjoy it for a couple of days in a row. One of my favorite simple and tasty snacks is a savory ricotta and spinach pie. And, to be honest, after you keep it in a fridge for a day, it becomes even tastier…
- 300-500 gr fresh spinach leaves (usually, you can always find them in Føtex store)
- 1 pack of soft Ricotta cheese
- 1 pack of soft Greek feta cheese
- 2 eggs (1 full egg and 1 egg yolk)
- 1 pack of prepared layer dough
- 2 garlic cloves
Preheat the pan. Wash the spinach leaves and fry them on an olive oil for about 2-3 minutes. Add minced garlic and salt and keep it on the small heat for another minute or two, then leave it aside. Mix half of the ricotta cheese, 1 egg and 1/5 of soft Greek feta cheese together. Add cooked spinach and mix well. Roll out the dough and cut it in smaller pieces, add the filling in the center and form small “sausages”. Place them in a spiral and add egg yolk on top.
Bake in an oven for about 30-35 minutes on 200°C.
P.s. if you feel like adding some spice, feel free, though we would advice you to add something else but salt since feta is salty enough. Enjoy!
