Home-Made Fettuccine Pasta With Creamy Caramelized Onion Sauce

When I am craving for good, home-made food with multidimensional taste variations, I start poking my boyfriend to help me in the kitchen. He’s a master of pasta and I’m a master of different sauce variations, so the synergy of the two always brings good outcome, especially when it comes to cooking fresh, tasty food.

Ingredients:

- 3 eggs

- 3 glasses of flour (about 350 gr)

- 100 gr butter

- 2 large onions

- 1 small squash

- 2 garlic cloves

- pasta spice (otherwise use fresh basil, salt, pepper and chili)

- 1 bullion cube

- 1 glass of milk

Preparation:

Before preparing pasta dough, make sure that you have a large and clean surface. Place the flour on a board and make a hole in the center. Place eggs into it. Start beating eggs in the center with a fork. Add some salt. Once the eggs are beaten, start beating the edges of flour into it, until everything is mixed. Once it’s a sticky ball, add some more flour and knead for about 15 minutes. Press the ball, fold it, press again and fold it again. Use the power to make it elastic. Once it’s done, place it in a cool place for about 20-25 minutes. Start preparing the sauce.

For a sauce, put about 50gr of butter in a pan and start melting it. Meanwhile, chop both onions in very small pieces, as small as you can. Sauté it in a pan on a small heat for about 15-20 minutes until the pieces of onion start caramelizing. Chop squash in equal thin pieces and add it on onions. Put the cover of the pan and leave the veggies for about 5 minutes. Meanwhile, prepare bullion: take a cube and melt in in a large cup. Mix it up add the liquid into the pan with vegetables. Stir it until it starts boiling, then add milk. As soon as liquids start boiling add 1-2 dessert spoons of flavor. When sauce starts to thicken, take it off the heat.

Start preparing the pasta. Roll the ball until it becomes as thin as possible, then cut it into equal thin yet flat pieces.

Boil the water in a pot. As soon as the water starts boiling, add some salt and put the pieces of fettuccine in it. Boil for about 7-8 minutes. Meanwhile, prepare a tasty spice blending for pasta: mince 2 garlic cloves and mix it up with about 50gr of butter. Add some spice. Once pasta is cooked, rack off the water and add the spice blending.

Mix pasta well. Put some rolls of pasta on a plate and add sauce on top. Garnish with fresh leaves of basil. Enjoy!
