When I feel like missing Vienna and it’s historical as well architectural beauty, I prepare a couple of soft traditional Austrian coconut cookies, which is one of the great Austrian desserts besides the popular cottage cheese strudel.
Coconut cookies are extremely easy to make and really tasty – a perfect choice for a lazy evening where you do not want to cook too much, though feel like spoiling yourself.
- 200gr sugar powder (or sugar)
- 200 gr shredded coconut
- 3 eggs
- lemon juice (either bottled or fresh)
- Stir the egg whites until the hard texture, slowly adding sugar to the mixture. Add 1 teaspoon of lemon juice. Add shredded coconut, mix carefully. Preheat the oven to 180°C. Take a teaspoon and form “mountain” cookies on a baking paper. Bake for about 7-10 minutes until cookies become slightly brown. Enjoy!
