Arizona Soup With Homemade Tortilla Chips & Avocado

I’m crazy about cream soups, but always hungry after having them. So this has some more to it to keep hunger away and will be perfect for the cold autumn evenings. It’s rich, creamy and will warm you up. Something we all need for a relatively cold and lazy Monday, right? The soup is also suitable for vegetarians!

Arizona soup

Ingredients for tortilla chips:

- 1/2 bunch of fresh parsley and dill

- 1 cup white flour

- 1 cup whole-wheat flour

- 1 tsp. salt 4 tbsp. olive oil

- Water

Ingredients for soup:

- 1 can of tomatoes

- 3 ripe tomatoes

- 1 large onion

- 2 cloves of garlic

- 1 leek

- 3 cups of vegetable broth

- 1 avocado

- 1 fresh jalapeno pepper if you like it spicy

- 2 tbsp. olive oil

- 1tsp fennel seeds

Preparation:

Mix flour, salt, finely chopped parsley and dill, add 2 tbsp. olive oil and add water. Mix it all well for 5-7 min until its smooth and does not stick to your fingers. Make it into balls of the size of walnut. Cover with towel and let it rest for 15 min. Chop garlic and onions and sauté in olive oil until soft but not brown. Add the leek and tomatoes cut in chunks and sauté for other 5 min. Season and add fennel seeds. Add can of tomatoes and broth and bring it to boil. Lover the heat and let it simmer for 30 min. Roll the walnut sized dough balls paper thin and using non-stick pan without oil fry on both sides. Each side will take 30-60 sec. depending how hot your pan is. It is better to use day old tortillas but fresh will do too. Cut tortillas in triangles, drizzle with olive oil and put in oven for 8 min. Use hand blender to get it smoother while still leaving some chunks. Serve with tortilla chips, fresh avocado slices and jalapeno on top. Enjoy!
